Fudgy Chewy Browkies (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 2 eggs at room temp
02 - 100g (about 3/4 cup) superfine sugar
03 - 90g (1/2 cup) brown sugar, the crunchy kind (demerara)
04 - 1 teaspoon vanilla extract

→ Chocolate and Butter

05 - 225g (just over 1 cup) chopped dark chocolate
06 - 56g (1/4 cup) butter
07 - 85g (1/2 cup) of your favorite dark or milk choc chips

→ Dry Ingredients

08 - 95g (close to 3/4 cup) plain flour
09 - 2 tablespoons cocoa powder
10 - 1 teaspoon baking powder
11 - 1/4 teaspoon salt

# Instructions:

01 - Put scoops of the dough on your tray, pop into the oven for 12-14 minutes till the tops are crackly. Let them rest on the baking tray about 10 minutes.
02 - Add the melted chocolate into your egg mix. Softly fold in sifted dry stuff and chocolate chips.
03 - Grab your mixer. Beat eggs with both sugars until super fluffy and pale.
04 - Melt the chopped-up chocolate and butter together in a heatproof bowl over gentle simmering water. When smooth, stir in your vanilla.
05 - Turn your oven to 160°C for fan setting (or 170°C regular). Lay some parchment on your baking tray.
