Savory Broccoli Feta Brownies (Print Version)

# Ingredients:

→ Vegetables & Herbs

01 - Broccoli florets - 7 ounces
02 - Scallions, diced - 4
03 - Fresh dill, chopped - 3 tablespoons

→ Dry Ingredients

04 - All-purpose flour - 1¼ cups
05 - Baking powder - 1 teaspoon
06 - Salt - 1 teaspoon

→ Wet Ingredients

07 - Milk - 1 cup
08 - Eggs, lightly beaten - 2
09 - Olive oil - ¼ cup plus 1 teaspoon for sautéing

→ Cheese

10 - Feta cheese, large crumbles - 4 ounces
11 - Mozzarella cheese - 4 ounces
12 - Pecorino cheese, grated - 3 tablespoons

# Instructions:

01 - Preheat oven to 375°F. Lightly spray a 11x7 inch baking dish with olive oil.
02 - Boil broccoli for 1 minute, drain and chop roughly. Sauté scallions in oil for 1 minute and set aside.
03 - Whisk together flour, baking powder, and salt. Add milk, eggs, and olive oil. Mix until thick, adding more flour if needed.
04 - Fold in cheeses, broccoli, scallions, and dill. Spread in baking dish, top with pecorino, spray with oil. Bake 45-50 minutes until golden brown.
