Heat olive oil in a large pot over medium-high heat. Add ground beef and diced onion, cooking for 5-7 minutes until beef is deeply browned and onion is translucent. Stir in minced garlic and cook for 1-2 minutes until fragrant.

Add diced tomatoes with juices, beef broth, Italian seasoning, smoked paprika, salt, and black pepper. Mix thoroughly and bring to a simmer. Cook for 5-7 minutes to meld flavors and reduce slightly.
