Basil Pesto Tomato Chicken (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken breasts
02 - Salt, to taste
03 - 4 garlic cloves, minced
04 - ½ cup basil pesto
05 - 2 tomatoes, sliced
06 - 8 oz fresh Mozzarella cheese, sliced
07 - 2 tablespoons fresh basil, chopped

# Instructions:

01 - Preheat the oven to 400°F.
02 - Place chicken breasts in a medium-sized casserole pan. Sprinkle the chicken with salt and top with minced garlic.
03 - Spread basil pesto evenly over each chicken breast. Add sliced tomatoes on top, then follow with thickly sliced fresh Mozzarella cheese.
04 - Bake in the preheated oven at 400°F for 20-30 minutes, depending on the thickness of the chicken breasts.
05 - When serving, top each chicken breast with freshly chopped basil and an extra slice of tomato. Pour the juices from the bottom of the casserole pan over cooked pasta or rice as a side dish.
