Baked Cod Coconut Lemon (Print Version)

# Ingredients:

01 - 1 cup creamy coconut milk
02 - 3 tablespoons lemon juice, squeezed fresh
03 - 4 fillets of cod (around 1 lb)
04 - 3 minced garlic cloves
05 - Cilantro sprigs for topping
06 - Salt and black pepper, add as you like

# Instructions:

01 - Crank up the oven to 375°F (190°C) and grease your baking dish lightly.
02 - Sprinkle salt and pepper generously on both sides of the cod, then place the fillets in the dish.
03 - Whisk together coconut milk, freshly squeezed lemon juice, minced garlic, and extra salt if you like. Keep stirring till it’s smooth.
04 - Pour the coconut mixture right over the fish, making sure it’s all covered.
05 - Bake the fish for 20 to 25 minutes, or until it’s tender and flakes when you test it with a fork.
06 - Sprinkle some cilantro on top just before serving.
