Crank up the oven to 375°F (190°C) and grease your baking dish lightly.

Sprinkle salt and pepper generously on both sides of the cod, then place the fillets in the dish.

Whisk together coconut milk, freshly squeezed lemon juice, minced garlic, and extra salt if you like. Keep stirring till it’s smooth.

Pour the coconut mixture right over the fish, making sure it’s all covered.

Bake the fish for 20 to 25 minutes, or until it’s tender and flakes when you test it with a fork.

Sprinkle some cilantro on top just before serving.
