Avocado Melt Chicken (Print Version)

# Ingredients:

01 - 4 bread slices (ciabatta, sourdough, or your pick)
02 - 4 cheese slices (cheddar, provolone, or Swiss)
03 - 1 ripe avocado, cut into slices
04 - 1 tablespoon olive oil for cooking
05 - 2 skinless, boneless chicken breasts
06 - Salt and pepper as you like
07 - 2 teaspoons Dijon mustard
08 - 2 tablespoons mayo
09 - 1 small red onion, sliced thin
10 - 1 tomato, cut into slices
11 - Butter or a splash of olive oil for toasting

# Instructions:

01 - Sprinkle both sides of the chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat. Cook each side of the chicken for 6-7 minutes, making sure it's done all the way through. Let it rest for a few minutes, then slice it thin.
02 - Slice the avocado and have the cheese slices prepared. Set them aside for later.
03 - On each bread slice, smear a little mayo and Dijon mustard for flavor.
04 - Take two pieces of bread and layer the chicken, avocado, and cheese on them. Add tomato slices and red onion on top. Use the rest of the bread to close the sandwiches, mayo side facing the filling.
05 - Warm up a grill pan or skillet over medium heat. Add some butter or olive oil to the pan. Lay the sandwiches in the pan and toast until the cheese is gooey and the bread looks golden, about 3-4 minutes per side. Press lightly with a spatula while cooking.
06 - Take the sandwiches out of the pan and cool them for a minute before cutting in half. Serve while warm.

# Notes:

01 - Reheat leftovers in a regular oven or toaster oven to keep the bread crisp. Skip the microwave so the bread doesn’t turn soft.
