# Ingredients:

→ Sauce and Seasonings

01 - 1 cup thick Greek yogurt (use the full-fat kind)
02 - 2 tablespoons chopped fresh parsley
03 - 1 tablespoon tomato paste (if you like)
04 - ½ teaspoon salt and onion powder
05 - 1 teaspoon smoky paprika
06 - ¼ teaspoon ground black pepper

→ Aromatics

07 - 2 ripe Roma tomatoes, diced
08 - 1 onion, chopped up
09 - 2 garlic cloves, minced really fine
10 - 1 tablespoon olive oil

→ Base

11 - 8 ounces dried pasta (spaghetti, penne, bowties, or spirals)
12 - 1 pound lean ground beef, at least 90% lean

# Instructions:

01 - Pour sauce over the pasta, splash in pasta water if you want it looser. Sprinkle on parsley at the end.
02 - Cook your pasta in boiling water, saving a quarter cup of the starchy liquid before draining.
03 - Tip in tomatoes, seasonings, and tomato paste. Stir in Greek yogurt and let it bubble for about 5 minutes.
04 - Brown the ground beef in olive oil, then pour off any extra fat. Toss in garlic and onion, cooking until they're nice and soft.
