Preheat the oven to 315°F. Liberally spray a bundt pan with non-stick baking spray.

In a stand mixer bowl, beat butter for 2 minutes on high speed. Gradually add sugar and salt, and beat on high speed for an additional 7 minutes until very pale and fluffy.

Add eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.

Reduce the mixer speed to low and add the sifted flour in two increments. Mix gently and avoid overmixing.

Pour in 7-Up soda and lemon extract. Scrape down the sides of the bowl and mix until just combined. Turn off the mixer.

Transfer the batter to the prepared bundt pan. Bake for 1 hour and 15-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool the cake in the pan on a wire rack for 10 minutes. Then, invert it onto a serving plate.

In a small bowl, whisk together confectioner’s sugar, 7-Up soda, and lemon extract until pourable. Spoon over the cooled cake and let harden.
