# Ingredients:

01 - 1 ½ cups unsalted butter, room temperature
02 - 3 cups granulated sugar
03 - 1 teaspoon kosher salt
04 - 5 large eggs, room temperature
05 - 3 cups sifted cake flour
06 - 1/2 cup 7-Up soda, room temperature
07 - 2 teaspoons pure lemon extract

08 - 1 cup confectioner’s sugar
09 - 3 tablespoons 7-Up soda
10 - 1/2 teaspoon pure lemon extract

# Instructions:

01 - Preheat the oven to 315°F. Liberally spray a bundt pan with non-stick baking spray.
02 - In a stand mixer bowl, beat butter for 2 minutes on high speed. Gradually add sugar and salt, and beat on high speed for an additional 7 minutes until very pale and fluffy.
03 - Add eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
04 - Reduce the mixer speed to low and add the sifted flour in two increments. Mix gently and avoid overmixing.
05 - Pour in 7-Up soda and lemon extract. Scrape down the sides of the bowl and mix until just combined. Turn off the mixer.
06 - Transfer the batter to the prepared bundt pan. Bake for 1 hour and 15-20 minutes, or until a toothpick inserted in the center comes out clean.
07 - Cool the cake in the pan on a wire rack for 10 minutes. Then, invert it onto a serving plate.
08 - In a small bowl, whisk together confectioner’s sugar, 7-Up soda, and lemon extract until pourable. Spoon over the cooled cake and let harden.
